Visiting...

...someone you love in the hospital is always hard to do. You want so much to help them but there is only so much you can do. Someone special to us is bed bound and does not have much to do and I hate seeing her that way. 


My heart aches everytime I go and there are not many that visit her or there to understand her when she talks to them. That is the hardest! A few try at least, while others just stay away. That makes me mad!


This act shows me what it will be like for the future. What a life, FCUK my life!

Results from today

While it started off so bad because google map sucks! Took us to the wrong place??? I do not understand. The house was very nice but half of the size I am in now and unfinished basement. This is going to be a hard to find something suitable. Second house was a cottage and great for cottage living... wait no it was so bloody bad! I could not walk into the rooms because it was so dirty. I almost fell down the stairs because there were so many shoes. The bathroom had carpet and I am pretty sure something was moving under the sink! YIKES!


At this point I am not to sure what to say. Found two more to look at. Found one for the in-laws that look great for them and I hope it works out!


Just came back from seeing a very nice but to small house. It is in the right direction, thank goodness!

Appointments All Day

Monday is filled with house hunting. One appointment after another and I am not in any mood or even have the energy to look. There is not enough time to pack, go to treatments, doctors appointment and search for a house.


How am I here like this? How did I get to this point? I just do not understand how I lost my life so fast.????????????

Irish Potato & Soda Bread

A few of my favourite types of bread are Potato and Soda Bread. One of my closest friends father would make it on the weekends. When I would come over they would tell me to sit down and have breakfast. Eggs, bacon and HP sauce with these two great breads. These bread were pure Irish! The best!!!! Try them out!

Irish Potato Bread

Ingredients

4 medium potatoes, peeled and halved
1 pinch salt
1/4 cup all-purpose flour, plus extra for dusting
1 tablespoon melted butter


Directions

1. In a pot, cover potatoes with water and bring to a boil over high heat. Simmer on medium-high heat until the center of the potatoes are tender when pricked with a fork, about 20 minutes. Turn off heat. Drain, return potatoes to pot and allow to completely dry out over remaining heat. Mash with a potato masher until smooth. 
2. Place warm mashed potato in medium bowl. Stir in flour, salt and melted butter. Mix lightly until dough forms. 
3. On a well floured surface, knead the dough lightly. The dough will be sticky. Use a floured rolling pin to flatten into a 9 inch circle about 1/4 inch thick. Cut into quarters using a floured knife. 
4. Sprinkle a little flour into the base of the skillet and cook the farls for 3 minutes on each side or until evenly browned. Season with a little salt and serve straight away. 

Irish Soda Bread

Ingredients:

•1 lb 2 oz/500g wholegrain wheat flour
•1 ½ tsp salt
•1 ½ tsp bicarbonate of soda
•18 fl oz/500ml buttermilk

Preparation:

Heat the oven to 200°C/400°F/Gas 6 

  1. In a large bowl, mix together the flour, salt, and bicarbonate of soda. Add the buttermilk and stir to form a loose dough.
  2. Lightly dust the work surface with flour and turn out the dough. Knead the dough gently until smooth. 
  3. Shape the dough into a ball and flatten to roughly 5cm/ 2in thick. Using a sharp knife lightly slash the surface of the dough in the shape of a cross. 
  4. Place the dough on a greased, baking sheet and bake in the oven for 30-35 mins until well risen and a light brown color. 
  5. Leave to cool. 

Cheesy Mac




Extra cheesy macaroni with Parmesan and Cheddar. Serves 10.

16 ounces macaroni 
1/2 cup evaporated milk 
2 eggs 
8 ounces sour cream 
1 teaspoon seasoning salt 
1/2 teaspoon pepper 
1 1/2 cups Cheddar (grated) 
1/2 cup Parmesan (grated) 
1 tablespoon butter 
Instructions:


Heat oven to 350 F or 175 C 
Boil salted water in a large pot. Cook pasta for ten minutes; drain. 
Combine milk, eggs, sour cream, salt and pepper. Add in the cooked pasta and cheddar. Top with Parmesan and pour butter on top. 
Bake twenty five minutes.

John St - House Viewing

We went to an open house, today and it is very nice and very small. This house hunting is going to be the end of me for sure. There are to many things that are against me and I am at my end for looking! I have no clue what to do and time is running out!

Fried Chicken & Waffles




Ingredients


Chicken: 
1 (3 1/2 pound) fryer chicken, cut into 8 pieces, giblets reserved and chopped 
1 cup all purpose flour 
1 tablespoon Essence, recipe follows 
Vegetable oil, for frying 


Buttermilk Waffles: 
2 cups all-purpose flour 
3 1/2 teaspoons baking powder 
1 teaspoon sugar 
1/4 teaspoon salt 
2 large eggs 
4 tablespoons unsalted butter, melted 
1 1/2 cups buttermilk 
Unsalted butter, topping 
Maple Syrup


Directions


Chicken:


  1. Heat enough vegetable oil to come about 1-inch up the sides of a large, deep cast iron skillet to 350 degrees F.
  2. Rinse the chicken under cold running water and do not dry; leave wet. In a large sealable bag, combine the flour with the Essence. Add the chicken pieces 1 at a time, seal, and shake to coat evenly. Remove and place on a wire rack over a baking sheet and let sit for 5 to 10 minutes.
  3. Carefully add the chicken to the hot oil and fry, turning once, until golden brown and the meat is cooked through, 20 to 30 minutes (the thighs and legs will take longest to cook). Remove and drain on paper towels. Remove the pan from the heat and with a slotted spoon, scoop out any browned bits remaining in the pan and drain on paper towels.


Waffles: 



  1. Preheat a waffle iron and lightly grease. Into a large bowl, sift the dry ingredients together.
  2. In a clean bowl, beat the eggs. Add the butter and buttermilk and beat to combine. Add the wet ingredients to the dry ingredients, and mix well.
  3. Pour the batter into the hot waffle iron and cook until golden brown and lightly crisp. Remove and if desired, top with a slice of butter, and serve with the chicken and maple syrup 



Essence (Emeril's Creole Seasoning): 
2 1/2 tablespoons paprika 
2 tablespoons salt 
2 tablespoons garlic powder 
1 tablespoon black pepper 
1 tablespoon onion powder 
1 tablespoon cayenne pepper 
1 tablespoon dried leaf oregano 
1 tablespoon dried thyme



Combine all ingredients thoroughly and store in an airtight jar or container. 


Yield: about 2/3 cup

All about SOUP!!!


There is nothing better than having some soup on a rainy cold day. Or even if you are having a bad day. Soup is great when you are sick and it can be comfort. Hope you enjoy these the next time you have a bad rainy day!


French Onion Soup



INGREDIENTS


4 cups thinly sliced large yellow onions (I like Spanish)
2 teaspoons sugar
2 cans (10 1/2 ounces each) beef consomme (with gelatin added)
2 cups water
2 tablespoons dry sherry (can substitute 1 teaspoon vanilla extract + 2 tablespoons orange or pineapple juice)
Pinch of dry thyme (optional)
8 slices French bread (if using very small baguette, you may need extra)
8 ounces low-fat or fat-free Swiss or Provolone cheese.
 
PREPARATION

  1. Place onions and sugar in large saucepan along with 1/4 cup of the broth. Saute for 5-10 minutes, or until onions begin to soften, stirring every minute or so. Add remaining stock and other ingredients, and bring to a boil. Reduce heat, and cover.
  2. Simmer for 15-20 more minutes, or until onions are very soft.
  3. While the soup simmers, arrange the baguette slices in single layer on baking sheet and bake in a 400-degree oven until the bread is dry, crisp, and golden at edges, about 10 minutes. Set aside.
  4. Adjust oven rack 6 inches from broiler element and heat broiler. Set individual broiler-safe crocks on baking sheet and fill each with about 1/8th of the soup. Top each bowl with 1 or 2 baguette slices (do not overlap slices) and sprinkle evenly with low fat or fat-free cheese. 
  5. Broil until cheese is melted and bubbly around edges, 3 to 5 minutes. Let cool 5 minutes before serving. If you don’t have oven-proof bowls, place soup in regular bowls as explained above, and either serve as is or heat in microwave until cheese melts.

A creamy soup featuring butternut squash, cream cheese and spices. Serves 6.

Ingredients:

6 tablespoons onion (diced) 
4 tablespoons butter 
6 cups butternut squash (peeled and cubed) 
3 cups water 
4 bouillon cubes (chicken) 
1/2 teaspoon marjoram (dried) 
1/4 teaspoon pepper 
1/8 teaspoon cayenne 
16 ounces packaged cream cheese
 
Instructions:

  1. Saute the onions in the butter until tender. Mix in the squash, water, bouillon, and spices. Boil and cook for twenty minutes. 
  2. Puree the squash together with the cream cheese in a blender until smooth. Pour into a saucepan, and heat; don’t boil. 

Creamy Herb and Potato Soup
Creamy potato soup with lots of herbs. Serves 5.

Ingredients:

2 potatoes, peeled and cubed 
2 cups water 
1 large onion, diced 
1/4 cup butter, cut 
1/4 cup all purpose flour 
1 teaspoon salt 
1/2 teaspoon thyme, dried and crushed 
1/4 teaspoon rosemary, dried and crushed 
1/4 teaspoon pepper 
1 1/2 cups milk
 
Instructions:

  1. Bring the two cups of water to a boil, cook cubed potatoes until soft. 
  2. In another saucepan, grill diced onion in butter. Then add the flour, salt, herbs and spices. Slowly stir in the milk. Bring to a boil; cook while stirring for 3 minutes. Add in the cooked potatoes with this mixture; heat all together.

Ingredients:

1/2 cup celery (chopped) 
1/3 cup onion (diced) 
2 tablespoons butter 
8 ounces cream cheese 
1 cup milk 
1 1/2 cups potatoes (cubed) 
1/2 pound prepared cooked shrimp (thaw and drain) 
2 tablespoons dry white wine 
1/2 teaspoon salt 
Instructions:

  1. Saute celery and onions in butter in a large pot. 
  2. Mix in cheese and milk, stirring over low heat until the cheese melts. 
  3. Mix in the potatoes, shrimp, wine and salt. Heat, stirring occasionally. Serve and enjoy!

This split pea and ham recipe is a new version of an old favorite. This warm soup is perfect for the winter when you need comfort food. Serves 4.

split pea and ham soupIngredients

8 cups of chicken broth 
1 cup of milk 
1 lb of dried split peas, rinsed 
1-2 lb of smoked ham, cut into 1/2 inch pieces 
salt and freshly ground black pepper to taste 
1 medium onion, thinly chopped 
2-3 carrots, chopped 
2-3 celery stalks, thinly chopped 
1 tablespoon of olive oil 
1 garlic clove, thinly chopped 
1 bay leaf
 
Cooking Instructions

  1. Heat oil in a large soup pot and saute onions, carrot, and celery over a medium heat. Add salt and pepper and saute for 2 minutes.
  2. Add garlic, bay leaf, and the dried split peas, cook and stirring for 1 minute.
  3. Add the chicken broth and smoked ham which has been cut into small pieces into the rest of the ingredients.
  4. Bring to a boil, cover the soup pout, and allow it to simmer for about 1 hour, until peas are tender.
  5. Remove from the heat, allow for the soup to cool, and get red of the bay leaf.
  6. When you have sufficiently allowed the coup to cool down, add milk, and using a hand held blender process until you get a smooth consistency.
tomato soup
 The secret to making a good tomato recipe is using quality ingredients. Use the best ripe red tomatoes you can find. For a richer version of this recipe, you can add a little cream or sour cream. Serves 4.

Ingredients

2 tablespoons of olive oil 
1 onion, chopped 
1 carrot, chopped 
1 celery stick, chopped 
2 garlic cloves, chopped 
1 1/2 lb of ripe tomatoes, quartered 
13 oz of canned tomatoes 
4 cups of chicken stock 
salt and pepper to taste 
1 tablespoon of fresh basil, chopped 
olive oil 

Cooking Instructions

  1. Heat the oil in a large saucepan and saute the onion, carrot, celery and garlic for 5 minutes. Add the tomatoes and continue to cook for a further 3-4 minutes until the tomato has broken down.
  2. Add the canned tomatoes, chicken stock and 1 cup of water. Bring to a boil, reduce the heat and simmer for 30 minutes.
  3. Remove from the heat and allow the soup to cool down a little. Puree the soup in batches in a blender.
  4. Season to taste with salt and freshly ground black pepper. Be generous with the pepper, tomato soup tastes great with a lot of pepper.
  5. Serve immediately while hot and garnish with chopped basil and a drizzle of extra virgin olive oil.

Wonton soup is a traditional chinese recipe which is very popular. The word “won ton” actually means swallowing a cloud, and the wonton dumplings which are used for this soup are thought to resemble clouds.

pork wonton soupIngredients

2 dried chinese mushrooms 
5 oz of pork mince 
1 tablespoon of fresh coriander, chopped 
1 tablespoon of soy sauce 
2 teaspoons of fresh ginger, grated 
18 wonton wrappers
 
SOUP

6 1/4 cups of chicken stock 
2 dried chinese mushrooms 
1 garlic clove, halved 
fresh ginger, sliced 
1 tablespoon of soy sauce 
6 1/2 oz of thin egg noodles 
3 1/2 oz of mushrooms 
2 spring onions, sliced 

Cooking Instructions

  1. Combine the chopped mushrooms, pork, coriander, soy sauce and ginger in a bowl, and mix together well.
  2. Brush the edge of each wonton paper with water and place the spoonful of the pork mixture into the center of each wonton. Stick the edges together.
  3. Combine stock, mushrooms, garlic, ginger, and soy sauce in a large saucepan and bring to a boil. Reduce heat and simmer the broth for 15 minutes. Strain the soup and remove the ginger and garlic. Slice the mushrooms and return to the soup.
  4. Cook the egg noodles in boiling water for a 2 minutes until tender. Drain well.
  5. Add the wontons to the soup and cook for a further 5 minutes. Add the noodles, mushrooms and spring onions and continue to cook until the vegetables are tender.

Posttraumatic stress disorder (PTSD) is a severe anxiety disorder that can develop after exposure to any event that results in psychological trauma. Formal diagnostic criteria (both DSM-IV-TR and ICD-10) require that the symptoms last more than one month and cause significant impairment in social, occupational, or other important areas of functioning.

Swim meet - no air

I was the girl that would train hard and work even harder when it came to sports. I was a tomboy that wanted to prove that I was better then the boys! This one swim meet was exciting and I really wanted to do well in it. I mean I could swim before I could walk so I should do great!


In the middle of my swim I started having an asma attack while swimming. I did not stop swimming I just kept going and we won! I suffered but I really did not care. 


For me it did not same to matter. I just pushed through it because I wanted it so bad. It is funny how as children we believe we can do anything but as adults we are to scared because we believe that we will fail.


Children are fearless and we need to pull the child in us out and push through are fears so that we may not fail at the things we desire in life.

Club night - Blue Tux

Every Friday night through the summer there was dance. Some friends and I would MC, and turn tables. There was a lot of dancing and great times. This one guy new to our group was so excited to come out with us on night. He showed up wearing a powder blue tux! This guy was 6'8 in height and blue as the sky. Get guy, funny, kind, a big teddy bear and cute. He could dance like the devil, too!

Buffalo Chicken Sandwich





Shredded Buffalo Chicken Sandwiches with Blue Cheese Celery Slaw


 ■4 medium-sized chicken breasts
 ■1/2 cup Saucy Mama’s Hot Wing Sauce
 ■3 cups coleslaw mix
 ■1 celery stalk, diced
 ■1/2 cup blue cheese, crumbled
 ■1 cup mayonnaise
 ■1 T. apple cider vinegar
 ■1 T. dijon mustard
 ■salt and freshly ground black pepper

Place chicken breasts in large sauce pan, cover with water by 1 inch.  Bring to a boil, partially cover the pan and simmer ten minutes.  Turn off heat, and let chicken sit in poaching liquid another 10 – 15 minutes, until cooked thoroughly.

While chicken is poaching, whisk together mayonnaise, vinegar and mustard.  Add diced celery, crumbled blue cheese and coleslaw; mix thoroughly and season with salt and pepper.

Remove chicken from pan and shred using two forks.  Place in bowl and add hot wing sauce, just enough to coat the chicken.  Serve chicken on a soft hamburger-style bun with a generous portion of blue cheese celery slaw right on top.  Pass extra wing sauce at the table.  Serve with corn on the cob and some cold beer!

Tip:  If you’re using a rotisserie chicken that’s no longer hot, or if your chicken has been refrigerated, let it come to room temperature, then heat your wing sauce before tossing with the chicken.  Your chicken will dry out if you microwave it, but the heat of the wing sauce will warm it up just enough without drying it out.

Sfoglaitelle - All time childhood favourite


Pastry

1 1/2 c. flour (add more if needed) 
1/2 c. sugar 
1/2 tsp. salt 
1/2 c. butter (cold) 
1 c. ice water 
3/4 c. melted butter or 
shortening 


Ricotta Filling: 
1 lb. Ricotta cheese 
2 tsp. milk 
1/4 tsp. vanilla extract 
1 egg, beaten 
1/4 c. sugar 
1 tsp. grated orange peel 


For Filling: Combine Ricotta, milk, egg, sugar and vanilla and run through sieve. Add orange peel. Store in refrigerator until ready to use. 


For Pastry: Sift together flour, sugar and salt in a bowl. Mix in cold butter with fingers. Gradually add enough ice water to hold ingredients together. Toss on lightly floured board and knead about 8 minutes or until dough is smooth. Cover and set aside in cool place 1/2 hour. Divide dough into four even parts. Roll out each piece with rolling pin on lightly floured board, making rectangular sheets about 20-inches long. If necessary, pull and stretch dough with hands while rolling, to make tissue thin and almost transparent. Brush each sheet and place sheets on top of each other. When four sheets are piled up, brush top with melted butter or shortening. Let stand 5 minutes, then roll tightly as for jelly roll. Roll in waxed paper. Set aside 30 minutes or more in refrigerator. With sharp knife, cut roll into 1/2-inch slices, which will resemble narrow rolls of ribbon. Place on board or platter, cover with towel and set aside 15 minutes in cool place. 


Place each slice on palm of left hand. With right thumb on center of roll, gently press through slice so that it forms a ribbed cone; make sure that ribs do not become entirely separated. Carefully work around cone with thumb and index finger until it is well shaped, 3-inches across mouth and 1/2-inch at tip. Press tip together. Fill each cone with 1 heaping tablespoonful of filling. Flatten cones slightly between palms of hands; place on lightly buttered cookie sheet; bake in a preheated moderate 375 degrees oven about 30 minutes or until cakes are golden color and crisp and filling is firm. Remove from oven, cool, dust with confectioners sugar. Serve. 


Yields about 1 1/2 dozen cakes. 


This pastry is one of the most difficult to make. It originated in Naples, centuries ago and since it is time consuming it was usually made in convents.



Grilled Salad


Cut the top part of the head (leafy) off and then sliced it down the middle
Drizzled olive oil on it and threw it on the grill. 
There is enough moisture that it steams it as it grills.  
Grilled some lemons and used these to make the dressing (grilled lemon juice, dijon mustard, a small bit of balsamic and olive oil salt to taste) 
Grill some mushrooms
Top the romaine with dressing and spead some fresh shaved parmesan on top
Grill up your favourite meat

Basketball - 25 Shots...

When I was in my early teens I was on the basketball team. I held my own and was a starter. A few of us competed in the 3 point 25 shots. You have to get 25 baskets from all the 3 point positions. To my surprise... I did it and won against some of the better players on my team. It was great!

Whenever we had a game our coach would drive us and every time we would drive across the railroad tracks he would tell us to lift our feet. He thought it was good luck. We would always do it and we would win. Perhaps, he was right or just maybe we were really good! Who knows! I just remember having some of the best times.

Eye Glasses - 3 pairs

I have three pairs of glasses and none of them are okay to wear. One the lens is missing??? I never wore them? One the arm broke off and the last Phoenix ate part of them!!! What luck! 

Some friends have said that I should have the operation to correct my sight but the thought of something touching my eyes, freaks me out! So, no operation for me, I am just going to stay with my glasses, half eaten!

Three Stooges

Growing up I like to watch the Three Stooges, Little Rascals and I love Lucy. I know there were a few more that I liked. They were fun shows and always made me laugh. That was something I did not do very often. How could you not laugh? 


I saw the new movie Three Stooges but I did not care for it. It was not the same, for me. I had hoped for better but it was not what it should have been. I guess most remakes are not. Sometime it is best to leave the classics alone. Just saying.

House Listings

Looking for houses has not been fun at all. In fact it has been a nightmare. He has one day a week so he is not making things easy for me at all. More punishment? Who knows? All I know between having to pack, looking for a house and all the doctors appointments...

When I first got Phoenix I took him for a long walk. When we we got to the school we went around the track. He lunched out at something, pulling me down to the ground. I was just sitting and he came up to me, sat in front of me looking at me with a tilt head. I rubbed has head and he opened his mouth - holy hell! A frog or whatever came out of his mounth and land in my hands! It scared the crap out of me and I throw that suckers across the field.


Phoenix just look at me like "what it was a gift"!!! Oh ya, nice gift!

Today, I see about the 40th Doctor! I am not sure it this one will be able to help but I am listening. I guess I am just so sick of listening to what they have to say. I just want to be okay. For once.

Tuesday's Movie Night

It is always nice to get out when I can. For some Tuesday's I get to go see a movie. Some movies have been really good, while others sucks! They truly do not make movies like they use to. But now and again they do come out with some good ones.


Movie Nights at home are fun, too. It is nice to relax of the sofa while enjoying a movie but it is so much better when you have all your friends and family around to enjoy it together. I am a huge fan of Alfred Hitchcock movies.

This day sucks!

New drug treatments sucks! I am so tired all of the time. I do not know day time from night time and when I woke it was snowing! What the hell? Snow? I did not see that coming. For a moment I was not sure how long was I out for and panicked for a minute!


I guess it is not surprise about the snow, crazy rain and hale. It is up and down outside, sucks! The rain is not stopping and dogs hate going out when it is like this. I am going stir crazy being inside and wish I could get out for a day.

Jam & Tea


Tea time is a great time to relax and enjoy a cup or two of tea. You can choose from many different favours. I personally like my tea plain, no milk. Tea is another comfort food item that warms up at night or is great to have with toast and jam.

Reduced-Sugar Strawberry Jam

Ingredients

5 cup(s) (crushed) fresh strawberries
1 package(s) (3/4 ounce) reduced-calorie or lower-sugar powdered fruit pectin
2 1/2 cup(s) sugar


Directions


1.Prepare six 8-ounce canning jars and their lids and bands for processing following manufacturer's directions. Heat jars in canner with enough water to cover to boiling. Meanwhile, in large bowl, with potato masher, crush enough berries in batches to measure 5 cups crushed berries.


2.In 5-quart Dutch oven, with wire whisk, gradually stir pectin into crushed berries. Let mixture stand 10 minutes. Meanwhile, place lids in small saucepan and cover with water; heat to boiling and set pan aside.


3.Heat strawberry mixture to boiling over high heat, stirring constantly. Stir in sugar and return strawberry mixture to a rolling boil. Boil hard 1 minute, stirring constantly. Remove strawberry jam from heat. With metal spoon, skim off and discard foam as it accumulates on top.


4.Place jars and lids upside down on wire rack set over towels to drain. Spoon jam into hot, drained jars to within 1/4 inch from top of jar. Wipe jar rims clean. Seal jars. Process in boiling-water bath for 10 minutes. Cool jars on wire rack to room temperature. Label jars and store in cool, dry place. Use within 6 months. Once opened, store in refrigerator and use within 3 weeks.

Ingredients



 6 tablespoons unsalted butter, softened, plus more for baking sheet
 1 1/4 cups cake flour (not self-rising), plus more for baking sheet
 3/4 teaspoon baking powder
 1/4 teaspoon baking soda
 1/4 teaspoon salt
 1 cup sugar
 1/2 cup almond paste
 4 large eggs, separated
 1/2 teaspoon pure vanilla extract
 1/2 cup whole milk
 1/2 cup cherry preserves, processed in a food processor
 Sugar Glaze
 Gum paste cherry blossoms, (available at Wendy Kromer Confections)



Directions


1. Preheat oven to 350 degrees. Butter a 12-by-17- inch rimmed baking sheet, and line with parchment paper. Butter parchment, and dust with flour, tapping out excess; set aside. Sift flour, baking powder, baking soda, and salt into a large bowl; set aside.
 2. Put 3/4 cup sugar and the almond paste into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-low speed until mixture resembles coarse meal, about 2 minutes. Raise speed to medium-high. Add butter; mix until pale and fluffy, about 2 minutes. Mix in egg yolks and vanilla. Add flour mixture in 2 batches, alternating with the milk. Transfer to a large bowl; set aside.
 3. Put egg whites into the clean bowl of an electric mixer fitted with whisk attachment; beat on medium-high speed until foamy. Gradually add remaining 1/4 cup sugar, beating until soft peaks form. Fold one-third of egg-white mixture into batter with a rubber spatula. Gently fold in remaining egg-white mixture.
 4. Spread evenly into prepared sheet. Bake until a cake tester inserted into center comes out clean, 15 to 20 minutes. Transfer sheet to wire rack; let cool completely. Unmold; remove parchment.
 5. Cut cake in half crosswise. Spread one half with preserves; top with remaining half. Refrigerate 1 hour. Trim cake, and cut into 11/2-inch squares. Transfer to a wire rack set over a rimmed baking sheet. Pour glaze over each petit four, spreading over top and sides to coat completely. Reuse glaze, straining to remove any solids, if needed. Refrigerate until set, about 20 minutes. Garnish with blossoms. Cakes can be refrigerated up to 2 days.
